Bespoke Hotels is delighted to announce the appointment of Dave Watts as the new head chef of its prestigious Cotswold House Hotel.
Dave, who trained under Raymond Blanc and Gary Jones at their two Michelin-starred Le Manoir au Quat’ Saisons restaurant and cooking school in Oxfordshire, arrives at the Cotswold House Hotel in nearby Chipping Campden, Gloucestershire with the task of overseeing the two luxury restaurants on site.
His presence has already prompted great excitement in the hospitality trade, and Dave was the subject of a double-page feature in a recent issue of HOTEL Owner magazine, in which he gave an insight into his favourite types of cooking, and the ingredients he uses.
Describing his style as “rustic neat”, Dave said that at both the hotel’s Dining Room and Cotswold Grill, he intends to “allow the quality of the ingredients to speak for themselves through natural shapes and textures”.
Focusing heavily on seasonal, sustainable and responsibly-sourced food, Dave is already stamping his mark on operations at this prestige Cotswolds hotel, and told HOTEL Owner: “I’ll be showcasing what we can do with exciting seasonal produce at both restaurants, and look forward to welcoming customers to our relaxing, comfortable venues.”
His arrival is already being heralded by the hotel’s regular customers, and has also caused a stir among his many friends at his former establishment, the news having been tweeted by Le Manoir’s followers more than 10,000 times.
“It’s a real coup for us to land the services of such a distinguished chef to head operations in the kitchen at our landmark Cotswolds hotel,” said Robin Sheppard, chairman of the Bespoke Hotels group.
